Chocolate Bread WHAT YOU NEED

WHAT YOU NEED

All Purpose Flour

Unsweetened Cocoa Powder

Sugar

Salt

Dry Active Yeast

Warm Water

Chocolate Chunks

In a large bowl mix together the flour, yeast, salt, cocoa, sugar, and chocolate.

Add the water and chocolate chunks and mix until combined.

Place dough in a buttered bowl and cover with plastic or a cloth.

Allow the dough to sit for at least five hours (up to eighteen). Want to know if it is ready? It should be DOUBLE in size.

Turn the dough out onto a piece of parchment paper lightly dusted with flour. Fold it over itself and dust with flour four or five times.

No-Knead Chocolate Bread

Ingredients

  • 3 cups All Purpose Flour
  • 1/4 cup Unsweetened Cocoa Powder
  • 2 tbs Sugar
  • 1/4 tsp Sugar
  • 2 tsp Salt
  • 1/2 tsp Dry Active Yeast
  • 1 1/2 cups plus 2 tbs warm water
  • 2 cups Chocolate Chunks/Chips

Instructions

  1. In a small bowl, combine water, yeast, and 1/4 tsp sugar (call me superstitious but I prefer to not use a metal utensil to mix). Let sit for 5 minutes.
  2. In a large bowl, combine 2 tbs sugar, cocoa powder, salt, chocolate chunks and flour .
  3. Add Water/yeast mixture to flour and mix until a shaggy dough forms. It will be slightly sticky.
  4. Place in a buttered or oiled bowl. Cover dough and let it sit at room temperature for 5 to 7 hours (up to 18 hours).
  5. Transfer the dough to a well-floured piece of parchment paper on your work surface.
  6. Fold the dough onto itself, pulling the outer edges towards the center creating a ball. Continue to do this until you create a ball that is tight, smooth, and holds its shape.
  7. Pick up the parchment paper with the dough ball and place back into your prepared bowl, cover, and let it rise for 30 minutes.
  8. Preheat oven to 450 degrees F and place Dutch oven, with lid on, inside to preheat.
  9. Once the oven is preheated, carefully remove the lid of the dutch oven. Using your parchment paper as handles, transfer the dough ball into the preheated dutch oven. Place the lid back onto the dutch oven and back for 30 minutes.
  10. Remove the lid and bake for an additional 15 minutes.
  11. Using the parchment paper as a handle, place the bread on a cooling rack. Allow bread to cool for at least 1 hour before cutting.
  12. Enjoy!
