Cranberry Orange Bread

Slice cranberries in half. Top with 1/4 cup sugar then set aside.

Mix together flour, baking soda, cinnamon, and salt. Set aside.

In a separate bowl, combine 2 cups sugar, orange zest, vanilla, and vegetable oil. Add eggs and combine.

Slowly add flour mixture, orange juice, and water to sugar mixture.

Divide batter into 8 greased mini loaf pans and bake at 350 degrees for 35-45 minutes.

Ingredients

  • 4 cups flour
  • 2 tsp baking soda
  • 1 ½ tsp salt
  • 1 tsp cinnamon
  • 2 cups sugar + 1/4 cup to put on top of the cranberries
  • 5 cups fresh or frozen cranberries cut in half
  • 6 tbsp grated orange zest
  • 2 eggs
  • 1 cup orange juice
  • 1 cup water
  • 2 ½ tsp vanilla
  •  cup vegetable oil

Instructions

  • Preheat your oven to 350 degrees and spray mini loaf pans with non-stick spray.
  • Slice cranberries in half. Top with 1/4 cup sugar then set aside.
  • Mix together flour, baking soda, cinnamon, and salt. Set aside.

  • Add eggs and combine.
