I LOVE Rice Krispie Treats! Everyone has childhood treats that hold a special place in their hearts. Some of those are store bought or from a restaurant. Some are homemade. I have two that I said to myself, “Self. I bet we could combine these to make something yummy.” And I was right.

Iconic Treats

The first is probably the simplest homemade dessert treat in existence. With just three ingredients and a couple minutes on the stove you have gooey sweet Rice Krispie Treats. The second is an iconic cracker, which is actually a cookie. Wait. I suspect that was a not-so-clever marketing strategy to attempt to fool moms. Nice try. We’re smarter than that. Originally called Barnum’s Animals to play to the popularity of the Barnum Circus, Animal Crackers have been around for 120 years and children of all ages continue to love them, like my nephews. We were watching the digital release of Animal Crackers with my children and our nephews the other day. As all the children were sitting there with their little snack trays, one of my nephews started asking about the animal crackers. That brought up a wave of nostalgia of when I was a kid: eating animal crackers, going to the circus, watching the tigers and elephants. So, even though the circus is no more, we still have ways to experience it with our little ones.

Circus Animal Cracker Rice Krispie Treats

Ingredients

3 tbsp Butter
1 10oz package of marshmallows
6 cups Rice Krispies Cereal
2 cups Iced Animal Crackers (rough chop)

Instructions

In a saucepan, melt the butter over low heat
Add in the marshmallows and stir until completely melted
Turn off heat
Stir in Rice Krispies and chopped animal crackers until coated
Press into a 9x13 baking dish* coated with cooking spray using a piece of wax paper (*Prefer thicker treats? Try a 8x8 baking dish!)
Cool and cut into squares.
Eat immediately until gone!
