Banana Bread

Banana Bread is the first thing that I recall watching my grandma make! Watching her bake left me completely mesmerized and in awe. She would take bananas that had seen better days and with great care,whip up a beautiful mixture of goodness. My favorite part was the beautiful aroma that filled the kitchen within moments.

Growing up, we lived in a close-knit community on the westside of Cincinnati. What that meant was my aunt, uncle, and cousins lived two houses away. My grandparents lived two blocks away and another aunt, uncle, and their kids lived two blocks from my grandparents. Weekends and summer meant spending time at grandma and grandpa’s house and when she made banana bread, there was a line for a bite of the delicious goodness.

After years of looking, after she passed, my grandma’s banana bread recipe was one that I was thrilled to find. To this day, anytime I make her bread, there is a line waiting for this family classic. This time, it is my little family lining up to partake.

Memories are great. Sharing something from my past is even better.

My favorite part about this recipe is that the ingredients are pantry staples that most of us keep on hand.

BANANA BREAD ~ WHAT YOU NEED

4 to 5 Ripe Bananas

Butter

Sugar

1 Egg

Vanilla Extract

Baking Soda

Salt

All-Purpose Flour

Classic Banana Bread

Ingredients

  • 4 to 5 ripe bananas, smashed
  • 1/3 cup of butter, melted
  • 1 cup of sugar
  • 1 egg, beaten
  • 1 tablespoon of vanilla
  • 1 teaspoon of baking soda
  • A pinch of salt
  • 1 1/2 cups of all purpose flour

Instructions

  1. Preheat the oven to 350° F (175° C).
  2. In a large bowl, smash bananas.
  3. Using a wooden spoon, mix butter into smashed bananas.
  4. Add sugar, egg, and vanilla and mix.
  5. Sprinkle baking soda and salt over mixture and combine.
  6. Add flour and mix until all ingredients are combined. Don’t forget to get the bottom of the bowl, don’t leave anything unmixed!
  7. Pour mixture into a BUTTERED loaf pan (or pan of your choice). Note: We recommend a buttered pan but you may prefer cooking spray.
  8. Bake at 350° F (175° C) for 1 hour. Please note, cooking times may vary based on your oven and location. It may beneficial to bake the bread for 40 minutes uncovered and 20 minutes covered. You know your oven, go with your gut!
  9. Cook on cooling rack.
  10. Remove from pan. Slice, serve, and enjoy!

I love banana bread.................. but will never make this. I don't bake. I buy 1 lb of flour in January each year and throw it away in December. But I will share this with sister in la and niece and one of them will end up make me some.
