There are times for gourmet meals. And there are times where its bath time, the kids are screaming, the dogs are barking and you want to eat 20 minutes ago and just go to bed. Those are the times for quick and easy, semi-homemade meals. In fact, those are most of the times. Like most bustling families, we really only have time for gourmet when the kids are elsewhere with a baby sitter (i.e. mom or sis).
The other night we happened to be in that situation (the insane one, not the gourmet relaxing one). As we were contemplating what the heck to have for dinner, the wife came up with about the most brilliant idea for a yummy, easy dinner; Buffalo Chicken Alfredo. Based off a dish we used to get, at a restaurant we used to go to on Black Friday, before the world locked down and we moved to the middle of nowhere.
Super easy to make, using only a few ingredients, our Semi-Homemade Buffalo Chicken Alfredo is a perfect blend of creamy and spicy and perfect for a quick easy meal on a hectic night. And the best part? This easy meal costs less than $10 to feed your family.
We love rotisserie chicken (can you beat the price from Sam’s Club or Costco?) and always have one or seven on hand. My family eats them, shreds them and freezes the shredded chicken, makes chicken stock from the bones, you name it. We also love Knorr Alfredo pasta. It’s easy to stock up on sale for $1 to $1.25 at Kroger so we always have it on hand. We also love Frank’s RedHot Sauce. We put that sh*t on everything.
Start by following the directions for the Knorr pasta. Once that is made, put some of the chicken in a bowl and splash some Franks Redhot on it.
Once the chicken is coated, toss it in with the Alfredo to warm up and serve. Super easy and fun to make and your family will love it.

- Knorr Alfredo Pasta
- Milk
- Butter
- Rotisserie Chicken (shredded)
- Frank's RedHot
Instructions
- Make Knorr Pasta according to directions
- In a separate Bowl, combine shredded rotisserie chicken and Frank's RedHot to taste
- Combine Knorr Pasta and Chicken in each serving bowl/plate
